Gill - This thread from just before Xmas might help and give you some info on New Years Eve flights.

I returned from SYD over New Years this year and it was just another flight. We got great views of fireworks around Hong Kong as we took off at 10 to midnight, there were Happy New Years announcements from flight deck and crew and that was it. No one was fussed at all!

I flew back from Miami on 24th December just gone. The staff had tinsel in their hair and a few xmas decorations were wrapped around the bar - Other than this nothing was particulary different to a usual flight. [:D]
