Is there any way of seeing which seats are available on a particular flight without ringing VA? I would like to change my dates of flight (MAN to MCO) and bring them forward 3 days but only if there are 2 seats together on the upper deck. The reason? Because the flights 3 days before are £260 cheaper each than my original booking. Thank You for any advice anyone can give me. It may seem a bit greedy to change flights but hey - £520 is a lot of money.

Expert Flyer is your best bet. You should have some free searches from when you bought your V-Flyer subscription (if not its only $4.99 for a months subscription). Have a look in the Expert Flyer forum on here and that will explain more and give you your log in details etc.
Just re-reading your post, what fare is your ticket booked in? as unless its a fully flexible ticket that you can cancel you won't be allowed just to cancel/move it without a fee, and its a low fare then any changes what so ever might not be allowed.
