There I was, watching the safety announcement, and Vic Reeves pops on, and then there was some odd sounding woman (ok, she wasn't that odd, but it wasn't Amanda). Amanda has been re-dubbed! I couldn't tell if there were any differences, it all looked the same to me.

Poor Amanda, she doesn't get much work now, and to lose this, is it the end of her career? [:?]

I thought it used to be Dani Behr ?[:w]

It was Dani Behr. See this thread where it is confirmed that a new safety video (or updated, rather) would be released, with Sue Cook quoted as being the voice that replaces Dani Behr.
