I was thinking of booking via virgin for me and my husband, and wondered if we needed a flying club membership each or if we can use the same number for each person at checkout? [?]

In a nutshell - unless you are talking about Gold card family accounts- the person whose bum is on the seat will get the points.

If two of you are travelling, you will need two accounts, though one can join and then introduce the other through the miles more friends' scheme.
