If you look at the
recent trip reports on that route, there are a few that give excellent detail of the menu.

I was in UC a week ago from LGW to LAS and the menu was as follows
Starters
Baby gem salad or Salmon ceviche
Main Courses
Braised beef in red wine sauce or Poached flounder or Summer vegetable Lasagne.
Cheeses
Dessert
Dessert of the day (variable i guess) or Orange ice cream with dark chocolate sauce.
I hope this helps

Wasn't flounder the fish from Disney's A Little Mermaid? I thought we hadn't seen him for a while...

Entirely O/T but anyway..
'Flounder' was also the fraternity name given to Kent Dorfman in 'Animal House'. Kent Dorfman was played by Stephen Furst. Stephen Furst voiced one of the characters in 'Little Mermaid 2'.
