Does anybody know of ways in which I can find out which A/C I will be travelling on? Obviously I know the 'Which Aircraft?' section on this site but thats a bit of a guessing game at the moment! Is there any sites that have registered timetables with A/C reg's or such?

Welcome to V-Flyer [y]
The simple answer is No.
For security reasons, airlines do not release the exact aircraft that will be on a specific route in advance. Best you can do is look at the 'Which Aircraft?' and make an informed guess. Also, aircraft can be changed at short notice.

You'll find out the registration of the aircraft when you look out of the window at the boarding gate.

Thanks Darren for that helpful answer.
Anybody know of any websites that provide the flight history then? My VS051 doesn't seem to be updated since the start of this month. [?]

http://www.lhr-lgw.co.uk will be the site you want then. It has all a/c details for each flight.

Sometimes if you look in the notes of EF flight status you will see the reg number. Honestly you cannot change the aircraft that operates your flight so why stress over it?
