Why does it take two aircraft to operate the MAN-MCO a maximum of six times a week. Is this the average downtime for a modern(ish) aircraft, or is there a 'spare' sat about doing nothing?

One is a spare.
It was orginally to be used for MAN-BGI which operated once or twice, but now is spare and they rotate sometimes.
Watch this space maybe there will be 3 or 4!;)

Are more 742's returning from Mohave?
Are plans changing at VS with possible Mumbai and Dubai routes being pushed through quicker than airbus can deliver?

To add to what Declan said (although I don't know anything about extra Classics coming out of the desert!) the 2nd Air Atlanta a/c was originally earmarked for a proposed summer LGW-BOS service which was canned before it started, hence it got parked at MAN instead.
It was hoped to use the 'spare' a/c in MAN for ad-hocs or sub-charters but there are never enough crew.
