I'm thinking of doing a paid upgrade one-way from PE later this year.
I was curious about how VB handle special meal requirements in UC though - specifically for myself, Vegan.
The 'freedom' menu looks very good and from what I've seen, the quality of food looks great. But what happens with for exammple a vegan meal? Do I just get a standard E/PE vegan meal or do VS do something different?

They have a special area where you can graze on some special imported hand sown grass from SRB's Nekar island :D:D:D:D

I've just logged onto the VS site to have a look at my up-coming UCS flight to SFO. There is the option of selecting a special meal request. The available options are:

Diabetic
Gluten free
Hindu
Kosher
Low fat
Low salt
Muslim
Vegan vegetarian
Vegetarian/Lacto

I would think you will still get the freedom meal service and there will be vegan meal for you as long as you have requested one. Just give special assistance a call once you have made the booking.
