Hehe... well, part of it is because Javier is an A340 Flight Officer for Iberia - so he gets a good view out of big windows at the front of the plane and time (well, a few minutes anyway) to set up wonderful shots like this when he's lucky enough with flight paths and timing!

It's most likely to be coffee or tea that has been poured down a galley drain, rather than into the toilet (some airlines - I believe BA are one of them - teach crews to throw stale coffee and tea into the loo).
The stain starts just where there is a galley drain mast, and the airflow "sucks" the fluid back on to the fuselage, hence the stain.
