Is it possible to try for two UCS reward flight flying out of heasthrow to miami and then returning orlando to manchester about 17/21 days later. When can I ring to arrange if I am aiming to be outbound on 27th dec 08.

You will be able to book your requirements no problem providing there are G's available on the dates you want to fly (not easy on the MCO route!). You will just have to wait until 11 months from your return date before you can book though. Keep checking the VS website and as soon as the dates you want are showing on there give FC a ring.

Personally I would consider booking the outbound 11 months from the outbound and then the inbound 11 months from the inbound if you want to be sure not to lose them and you know your dates and are not likely to change them. It costs no extra to book 2*one-ways.

If you are indicating that you would not take the outbound flight UNLESS you can book the inbound flight as a reward, then you have to way up the cost of cancelling the outbound, if the inbound is not available, against the stress of not knowing for up to 3 weeks if you decide to delay booking the outbound and book both inbound and outbound at the same time. At the time of writing I believe that cost is 25% of your miles for each cancelled seat.
